This, plus a healthy dose of kosher salt, is all a good steak needs or should have. The main thing is obvious, but often overlooked: start with a good cut of meat. Save the marinades for lesser cuts that need the tenderizing action of the acid in a marinade.

The other key is don't cook it too much. Anything beyond medium rare and you have ruined your dinner.
